Greek Nachos


Ingredients

Directions

  1. Preheat the oven to 350 degrees F
  2. Cut whole wheat pita circles in half, then cut the halves into smaller triangle pieces.
  3. Mix the pita triangles in a large bowl with salt, pepper and garlic powder to taste. Add 1 tablespoon of olive oil to bowl and mix to coat all of the pita triangles.
  4. Line a baking sheet with the pita triangles, place in an even layer. Place in the oven to brown the pita triangles for 10 minutes total, flipping them half way through at 5 minutes.
  5. When the pita triangles are baking, prepare the toppings for the nachos, halve the cherry tomatoes, rinse and halve the kalamata olives, rinse the roasted red peppers.
  6. Remove the pita triangles from the oven to cool for about 5 minutes.
  7. Assemble the pita nachos in bowls or on a plate with the 5 topping ingredients: kalamata olives, feta, cherry tomatoes, roasted red peppers, and salad greens. Enjoy!
